I was thinking about all of the delicious food that we have at this time of year and I thought of my favorite salad to make for Thanksgiving. I made it for the first time last year and I love it so much that I think I will make it a tradition. Also, Leslie asked for it a while back and I forgot to post it, sorry, better late than never eh?
So with the help of my mom and foods that I love I have come up with the perfect Fall Salad with orange poppyseed dressing.
Ingredients for Salad:
Salad Greens: Preferably a Spring Mix
Craisins
Mandarin Oranges
Sugared Almonds
Grated Mozerella Cheese
Now you may have noticed that I didn't tell you measurements of everything, that's because it's totally up to you on this part. If you like lots of cheese then put lots of cheese it you like lots of almonds then be my guest, put lots of almonds. Like I said, totally up to you. :)
Orange Poppyseed Salad Dressing
Instructions and Ingredients
In a food processor bowl or blender container combine 3 tablespoons of granulated sugar or Splenda,
1 and 1/2 teaspoons of finely shredded orange peel,
2 tablespoons of fresh or concentrated orange juice,
2 tablespoons vinegar,
1 tablespoon of finely chopped onion,
and a dash of ground black pepper.
Cover and process or blend until combined. With processor or blender running, slowly add
1/3 cup of vegetable or canola oil in a steady stream until mixture is thickened. Stir in
1 teaspoon of poppyseeds.
Don't pour the dressing onto the salad until just before you eat it. It will get soggy otherwise, and no one likes soggy lettuce. Shake well before you pour it and if you want to make it before hand it can store in the refrigerator for up to 1 week.
Sorry I don't have a picture of the of the final product that's why I showed all of the ingredients so you can get an idea as to how yummy this is. My mouth is watering just thinking of it. Well if no one else makes this then I probably will.

It sounds deliciouso. It is a must try. I think that I would use fresh orange in it rather than mandarins. I for some reason do not like mandarins canned. That dressing sounds like it could go great on any green salad. And about the sugared nuts. That is how you make pralines too. You just do it with pecans instead of almonds. You can sugar any nut and they are yummy. I keep on forgetting that you are not coming down for Turkey Day. I will miss you. It just makes me really excited for Christmas to have both you and Miranda with the family.

here is the red cabbage recipe:
1 head red cabbage
1 cup water
2 cups vinegar
2-3 tablespoons salt
1-2 cups sugar
3-4 tablespoons butter
divide cabbage into four quarters, cut out the core and slice very thinly. place in large pan and add water, vinegar and salt. simmer for two hours. add sugar and cook for one more hour. then add butter and serve.
note: you can use splenda for some or all of the sugar, but it will not be as pretty or thickened.
also, i sometimes chop up an apple or two and add to the cabbage. this is my mother-in-law's recipe. some other recipes call for cloves or other spices or currant jelly etc. i suggest not adding all the salt or sugar at first but waiting and tasting at the end to see what you need. hope you make this and enjoy it. love liz
